FRIED BLACK MUSHROOM WITH WHITE CABBAGE |

| Method: | |
| 1. | Soak and trim mushrooms. Squeeze out excess water and shred. Marinate with 1/4 tsp cornflour and 1/2 tbsp oil. |
| 2. | Wash white cabbage and section. Leave to drain. |
| 3. | Saute ginger with 3 tbsp oil. Add white cabbage and stir fry until it is tender. Put in mushrooms and sectioning. Cook for about 10 minutes. |

| Method: | |
| 1. | Wash and dice dried shrimps. Shallow fry over low heat until dried shrimps turn crispy. |
| 2. | Boil chestnuts until tender and dice. |
| 3. | Wash lettuce and cut into small pieces. |
| 4. | Wash glutinous rice and soak for 4 hours. Steam till it is thoroughly cooked and leave it to cool. |
| 5. | Shallow fry peanuts until it turns crispy. Remove outer membrane when it is cold and dice. |
| 6. | Stir fry glutinous rice, chestnuts, peanuts and seasoning with 3 tbsp oil. Taste and add parsley and spring onion. Dish up. Serve with lettuce as wrappings. |
