FRIED BLACK MUSHROOM WITH WHITE CABBAGE

Ingredients:
1 lb white cabbage
2/3 oz black mushrooms
A slice ginger
Seasoning:
1/2 cup water
1/2 tsp salt
1/3 tsp sugar
Method:
1.

Soak and trim mushrooms. Squeeze out excess water and shred. Marinate with 1/4 tsp cornflour and 1/2 tbsp oil.

Wash white cabbage and section. Leave to drain.

3.

Saute ginger with 3 tbsp oil. Add white cabbage and stir fry until it is tender. Put in mushrooms and sectioning. Cook for about 10 minutes.

White cabbage helps to remove internal heat and strengthens the stomach. It also helps in excretion.

GLUTINOUS RICE WRAPPED IN LETTUCE

Ingredients: Sauce:
10 oz glutinous rice
3 oz dried shrimps
5 oz peanuts (shelled)
8 oz chestnuts (shelled)
2 stalks diced parsley
2 stalks diced spring  onion
Some lettuce
Seafood paste and chilli paste
Dash of sesame oil
Pinch of pepper
1/2 tsp salt
1/3 tsp sugar
1 tbsp light soy
1 tsp chicken powder


Method:
1. Wash and dice dried shrimps. Shallow fry over low heat until dried shrimps turn crispy.
2. Boil chestnuts until tender and dice.

Wash lettuce and cut into small pieces.

4.

Wash glutinous rice and soak for 4 hours. Steam till it is thoroughly cooked and leave it to cool.

Shallow fry peanuts until it turns crispy. Remove outer membrane when it is cold and dice.

6.

Stir fry glutinous rice, chestnuts, peanuts and seasoning with 3 tbsp oil. Taste and add parsley and spring onion. Dish up. Serve with lettuce as wrappings.
