SPIRE-RIBS WITH FRESH FRUIT
Ingredients: Sauce:
1 lb chopped spare ribs
1 to 2 oranges
1 kiwi fruit
1 tsp mashed garlic
2 tbsp tomato ketchup
1 tbsp orange juice
1 tsp orange peel (mashed)
1 tbsp sugar
1/4 tsp salt
Seasoning: Dash of sesame oil
1/2 tsp cornflour
2 tsp water
1/2 tsp salt
1tbsp orange juice
1 small egg
2 tbsp cornflour
Method:
1.

Peel kiwi fruit and cut into small pieces. Soak in boiling water and drain when ready to cook.

Wash spare ribs and wipe dry. Marinate with seasoning for 1/2 hour. Fry in cooked oil.

Saute garlic with 1 tbsp oil. Add seasoning and bring to boil. Add spare ribs and kiwi fruit. Stir fry until sauce is dried up.

Good for nourishing the blood and strengthening the body.

STIR FRY MEDLAR LEAVES WITH SHREDDED PORK

Ingredients:
5 oz lean pork
10 oz medlar leaves
1 tbsp medlar (Kei-chee)
1/2 shredded carrot
1 tbsp shredded ginger
Seasoning:
2 tsp light soy
1 tsp cornflour
1 tbsp oil
Sauce:
Dash of sesame oil
Pinch of pepper
1 tsp light soy
1/4 tsp sugar
1/4 salt
1/2 tsp cornflour
2 tbsp water

Method:
1. Wash Kei-chee and steam with 1 tbsp water for 20 minutes.
2. Wash medlar leaves and pick the leaves. Put in a sieve.
3. Shred lean pork and marinate with seasoning for 10 minutes.
4. Stir fry medlar leaves with 2 tbsp oil. Put in sieve.

Saute ginger with 2 tbsp oil. Add pork and stir fry for a while. Put in carrot and fry until pork is nearly cooked. Add water in which Kei-chee had been soaked. Put in sauce and medlar leaves. Mix well and dish up.
