| Method: | |
| 1. | Remove shells of gingko and put into boiling water to cook for 5 minutes. Remove the outer membrane and wash. |
| 2. | Dissolve sugar in 4 cups of water. Bring to boil. |
| 3. | Put gingko, fox nut, red dates, longan and sugar solution into steaming pot and stew for 3 hours. |

| 1. | Wash some rice and drain. Fry in a wok without oil over low heat until it turns golden brown. |
| 2. | Boil 3 cups of water, add toasted rice and longan. Boil over low heat for 30 minutes and serve. Or: Mix 2 oz Tong-Sam with 2 tbsp fried rice and 3 cups water. Boil for 50 minutes and make it into fried rice and Tong-Sam tea. |

| 1. | Core the pear and remove the stalk. |
| 2. | Stuff Chee-pui powder and sugar into pear. Replace the stalk and link them up with tooth pick. Put in steaming pot and stew for 45 minutes. |
