STEW MILK WITH GINGER JUICE

Good for complexion and alleviating intolerance of cold.

Ingredients:
3 egg white (use large eggs)
1 cup fresh milk
1/3 cup sugar
1 tbsp ginger juice
Method:
1.

Dissolve sugar into 1/4 cup of water and bring to boil. Leave to cool.

2.

Whisk egg white together with milk. Add ginger juice and sugar solution. Whisk again. Skim away the bubbles and put into a bowl. Cover the bowl with a plate and stew for 10 minutes.

STEAMED EGG WITH ROCK SUGAR

Ingredients:
3 big eggs
1/2 cup milk
3 oz rock sugar (crushed, 1 appromixmately 1/3 cup)
1 tbsp ginger juice


Method:
1.

Boil rock sugar with 1/2 cup water and leave it to cool.

2.

Whisk eggs, add milk, ginger juice and sweetened waer, whisk again and remove the bubbles on top.

3.

Steam a bowl for 2 minutes and fill it with egg solution (make sure to fill only 80% of the bowl). Use a plate or aluminium paper to cover up the bowl and steam for 10 minutes.

Good for expelling cold in the system and nourishing the spleen, stomach and lungs.

STEW OF WHITE FUNGUS, PAPAYA WITH CRYSTAL SUGAR IN LUMPS

Ingredients:
2 lb papaya
1 oz dried white fungus
5 oz lump sugar

Method:
1.

Dissolve sugar in 4 cups of water. Bring to boil.

2.

Soak dried white fungus in water for an hour until it swollen. Tear into little pieces and put into boiling water to cook for 10 minutes. Take out and wash, drain.

3. Remove skin and stone of papaya. Wash and slice.
4.

Put papaya, white fungus and sugar solution into stewing pot and stew for 2 and half hours.

Good for cleansing the liver and moisening the lungs.
